Antimicrobial Activity of Lysozyme and Papain Activated by EDTA and Cysteine against Escherichia coli in Culture Medium and in Aqueous Aloe vera Extract

The antimicrobial activity of lysozyme and papain activated by ethylene diamine tetraacetic acid (EDTA) and cysteine against Escherichia coli was investigated in culture medium and in Aloe vera extract. E. coli was resistant not only to lysozyme, but also to papain at the range of concentration examined. Papain did not show any effect on the antimicrobial activity of lysozyme. High concentration of EDTA inhibited the growth of E. coli and cysteine stimulated antimicrobial activity of EDTA. The addition of EDTA and cysteine influenced significantly antimicrobial activity of papain and lysozyme. The enzyme inhibitor, leupeptin inhibited antimicrobial activity of papain and lysozyme and the leupeptin inhibited completely the antimicrobial activity of papain and lysozyme in the absence of EDTA and cysteine. The growth of E. coli in aloe extract reached maximum within 1-3 days and was completely inhibited by addition of 5.0 mM EDTA, 10.0 mM cysteine, 1.0% papain and 0.1% lysozyme.
